Superfood recipe: Coconut shrimp

Ingredients

  • 1 egg
  • ½ cup of wheat flour
  • 2 cups nuts, dried coconut meat (crushed of flaked)
  • bread crumbs
  • shrimps
  • coconut oil
  • coconut milk
  • honey
  • vinegar
  • orange juice
  • orange zest
  • curry
  • red pepper flakes

How to make it

Step1: Combine half of the coconut milk, and flour in a baking dish.

Step 2: Separate the egg yolk from the egg white, and beat the egg white in a medium bowl until slightly frothy.

Step 3: Sprinkle the shrimp with salt and pepper, and then add it to the egg white and stir lightly to cover all scrimps. Now put the wheat flour in a bowl, and get another one for the bread crumbs. Take our the scrimp piece by piece, first cover them lightly with the flour and afterwards coat them with the bread crumbs. 

Step 4: Lightly spray a baking sheet with nonstick spray and place the shrimp on the baking sheet in a single layer. Then, spray the shrimps with coconut oil, and bake them in the oven on 400 degrees for about 8 to 10 minutes. You know they’re done when they’ve turned golden on the outside.

Step 5: When waiting for the scrimps to cook, you can prepare the dipping sauce. Toast the curry and red pepper flakes in a saucepan over medium heat. This takes about 1 minute. The, add the honey, vinegar, orange juice, and zest. Bring to a simmer, and keep stirring it every now and then, until the sauce is heated through. This takes about 1 to 2 minutes. All done!
