Twice cooked pork with chili bean sauce

Ingredients

400 grams of streaky pork.

2 to 3 red and green peppers.

3 to 4 tablesoons of cooking wine.

3 to 4 pieces of ginger.

200 grams of scallion.

2 tablespoons of chili bean sauce.

1 tablespoon of sugar.

1 tablespoon of soy sauce.

 ½ tablespoon of oil.

5 grams of chicken essence.

How to make it

Step 1

Add the meat to a pan with 800 ml of water, together with the cooking wine and ginger, and bring to a boil. When the water is boiling turn the stove to moderate heat and let it stay on for about 30 minutes.

Afterwards, take out the meat, wait until it’s cooled off, and slice into small pieces.

Step 2

Heat the oil in a pan, add the meat, and stir fry. When the meat has taken up most of the oil, add the bean paste, green and red peppers, scallion piece by piece while stir frying. When you start to smell the scallions, it’s done.

Step 3

Plate up the dish and add the sugar and chicken essence as a finishing touch.
